Baking Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with muffin liners.
- Combine the dry ingredients in a large bowl: white whole wheat flour, baking soda, salt, cinnamon, and nutmeg.
- Mix the wet ingredients in another bowl: cooked mashed sweet potatoes, shredded zucchini, eggs, maple syrup, vanilla extract, and melted coconut oil.
- Fold the wet mixture into the dry ingredients until just blended.
- Scoop the batter into the muffin tins, filling each about two-thirds full.
- Bake the muffins for 22-26 minutes, or until a toothpick inserted comes out clean.
- Cool the muffins in the tin for a few minutes before transferring them to a wire rack.
