How to Make Sabich Sandwich
  1. Slice the medium Italian eggplant and sprinkle with kosher salt. Let it sit for 20 minutes to draw out excess moisture.
  2. Heat extra virgin olive oil in a skillet over medium heat. Sear the salted eggplant slices until golden brown and tender, about 4-5 minutes on each side.
  3. In a bowl, combine tahini, fresh lemon juice, grated garlic, and ice water. Whisk together until smooth and creamy.
  4. In a separate bowl, toss together diced Persian cucumbers, chopped Roma tomato, sliced red onion, parsley, lemon juice, and olive oil. Mix until well combined.
