How to Make Sabich Sandwich
- Slice the medium Italian eggplant and sprinkle with kosher salt. Let it sit for 20 minutes to draw out excess moisture.
- Heat extra virgin olive oil in a skillet over medium heat. Sear the salted eggplant slices until golden brown and tender, about 4-5 minutes on each side.
- In a bowl, combine tahini, fresh lemon juice, grated garlic, and ice water. Whisk together until smooth and creamy.
- In a separate bowl, toss together diced Persian cucumbers, chopped Roma tomato, sliced red onion, parsley, lemon juice, and olive oil. Mix until well combined.
