How to Make Air Fryer Banana Blueberry Muffins
  1. In a mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and kosher salt until well combined.
  2. In another bowl, mash the overripe bananas until smooth. Whisk in the egg, light brown sugar, vegetable oil, sour cream, and vanilla extract until creamy.
  3. Gently fold the wet ingredients into the dry mixture using a spatula until just combined.
  4. Carefully fold in the fresh or frozen blueberries and banana chips.
  5. Preheat your air fryer to 350°F (175°C).
  6. Scoop the muffin batter into silicone muffin liners or an air fryer-safe muffin tray. Air fry for about 12-15 minutes until golden.
  7. Allow the muffins to cool for a few minutes before serving.
