Preparation
  1. Preheat Grill: Start by heating your grill to medium-high.
  2. Prepare Zucchinis: Brush the halved zucchinis with extra-virgin olive oil. Sprinkle with kosher salt and black pepper. Grill the zucchini halves for about 3-4 minutes per side until they are tender and have beautiful grill marks.
  3. Make Avocado Salsa: In a mixing bowl, combine diced avocado, frozen corn, chopped tomatoes, sliced green onions, lime juice, and a pinch of salt and pepper. Stir gently until well mixed.
