Ingredients

  • 2 cups Shredded Dark Meat Turkey or white meat or diced chicken
  • 1/2 cup Leftover Gravy or broth if out of gravy
  • 1 can Chipotle Chiles in Adobo adjust for spice preference
  • 1 teaspoon Ground Cumin can be omitted
  • 1 teaspoon Dried Oregano Italian seasoning can replace
  • 1/2 teaspoon Ground Cinnamon leave out if undesired
  • 1 oz Roughly Chopped Dark Chocolate semi-sweet chocolate works well
For the Toppings
  • 1 cup Leftover Stuffing crisp it up for best texture
  • 2 cups Thinly Sliced Cabbage or lettuce/slaw mix
  • 1/4 cup Chopped Fresh Parsley cilantro is a great swap
  • 1/2 cup Leftover Cranberry Sauce store-bought works
  • 1/4 cup Chopped Craisins or fresh fruit like mango
For Assembly
  • 8 pieces Warm Corn Tortillas flour tortillas can be a substitute
  • 2 pcs Limes or lemon juice as a substitute
  • 2 tablespoons Vegetable Oil olive oil is healthier
  • 1 teaspoon Kosher Salt adjust according to taste
  • 1/4 cup Leftover Nuts and/or Seeds walnuts or sunflower seeds can be used

How to Make Thanksgiving Leftover Tacos
  1. In a pan over medium heat, warm up your vegetable oil until it's shimmering but not smoking.
  2. Add your chopped leftover stuffing to the pan and cook until golden brown and crunchy, about 4-5 minutes; set aside.
  3. In the same pan, combine your leftover gravy, chipotle chiles, cumin, oregano, cinnamon, and dark chocolate. Cook until heated through, about 3-4 minutes.
  4. Toss in your shredded dark meat turkey, stirring until evenly coated in the gravy mixture; heat for 2-3 minutes.
  5. Lay your warm corn tortillas with thinly sliced cabbage, then top with turkey-gravy mixture, crispy stuffing, and a spoonful of cranberry sauce.
  6. Plate your tacos and sprinkle with chopped parsley or cilantro, serve with lime wedges and chopped craisins.
