Ingredients
  

For the Soup Base
  • 2 tablespoons Olive Oil or vegetable oil
  • 1 cup Carrot sliced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 2 cloves Garlic minced
  • 4 cups Beef Broth or reduced sodium
  • 1 cup Water optional
  • 14.5 ounces Canned Diced Tomatoes with juices
  • 2 tablespoons Tomato Paste intensifies flavor
  • 1 cup Potato diced
  • 1 teaspoon Italian Seasoning or oregano/basil
  • Salt to taste
  • Pepper to taste
For the Noodles
  • 1 cup Alphabet Noodles or any small pasta shape

Method
 

Cooking Steps
  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the sliced carrot, celery, diced onion, and minced garlic. Sauté until the onion softens, about 2-3 minutes.
  3. Pour in the beef broth, water, canned diced tomatoes, tomato paste, diced potato, and sprinkle in the Italian seasoning. Stir and bring to a boil.
  4. Once boiling, reduce heat and let it simmer for 15 minutes.
  5. Add the alphabet noodles and cook for an additional 7-8 minutes until noodles are al dente.
  6. Taste the soup and add salt and pepper as needed.
