- Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, whisk together the packed light brown sugar and large eggs until foamy. Add the neutral oil, full-fat cottage cheese, mashed bananas, vanilla extract, and kosher salt. Mix until smooth.
- Sprinkle the all-purpose flour, baking powder, and baking soda over the wet mixture. Gently stir until just combined, and fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-55 minutes, or until golden brown and a toothpick comes out clean.
- Allow the banana bread to cool in the pan for about 20 minutes before transferring it to a wire rack to cool completely.
