Method
 

Directions
  1. Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the packed light brown sugar and large eggs until foamy. Add the neutral oil, full-fat cottage cheese, mashed bananas, vanilla extract, and kosher salt. Mix until smooth.
  3. Sprinkle the all-purpose flour, baking powder, and baking soda over the wet mixture. Gently stir until just combined, and fold in the chocolate chips.
  4. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-55 minutes, or until golden brown and a toothpick comes out clean.
  5. Allow the banana bread to cool in the pan for about 20 minutes before transferring it to a wire rack to cool completely.
