Method
 

Directions
  1. Preheat the oven to 375°F (190°C) and prepare a baking tray by lightly spraying it with cooking spray.
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Drain on paper towels.
  3. Combine the dry ingredients in a large bowl: mix flour, cornmeal, sugar, baking powder, and salt.
  4. Whisk together the wet ingredients in another bowl: beaten egg, creamed corn, melted butter, and sour cream.
  5. Fold the wet ingredients into the dry mixture gently until just combined, then add corn kernels, cooked bacon, and shredded cheddar.
  6. Spoon the mixture into the prepared baking tray, filling each cavity just to the top. Bake for about 20-25 minutes.
  7. Cool for a few minutes before serving, then garnish with extra sour cream, scallions, and more bacon crumbles.
