  • 1/4 cup Peas or Green Beans Frozen veggies are acceptable for ease.
  • 1/4 cup Corn Can be omitted for a lower-carb option.
  • 1/2 tsp Salt Adjust to taste based on dietary preferences.
  • 1/2 tsp Ground Black Pepper Optional for a milder taste.
  • 1/2 tsp Dried Thyme Fresh thyme is a lovely alternative.
  • 1/2 tsp Dried Basil Oregano can be substituted in a pinch.
  • 1 cup Gravy Feel free to use homemade or store-bought gravy.
Topping
  • 2 cups Mashed Potatoes Leftover or instant mashed potatoes work well.

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a large skillet over medium heat. Add the chopped onion, celery, and carrots. Sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Combine the shredded turkey, peas (or green beans), corn, seasonings, and gravy into the skillet. Stir until heated through, about 3-4 minutes.
  5. Transfer the turkey mixture into a 1-quart baking dish and spread it evenly.
  6. Heat the mashed potatoes until warm. Mix half of the cheddar cheese into the potatoes and gently spread this layer over the turkey mixture.
  7. Top the mashed potatoes with the remaining cheddar cheese.
  8. Bake the pie for 30 minutes. Optionally, broil for a few minutes to lightly brown the cheese.
  9. Serve warm and enjoy!
