- Preheat your oven to 350°F (175°C).
- Melt the butter in a large skillet over medium heat. Add the chopped onion, celery, and carrots. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Combine the shredded turkey, peas (or green beans), corn, seasonings, and gravy into the skillet. Stir until heated through, about 3-4 minutes.
- Transfer the turkey mixture into a 1-quart baking dish and spread it evenly.
- Heat the mashed potatoes until warm. Mix half of the cheddar cheese into the potatoes and gently spread this layer over the turkey mixture.
- Top the mashed potatoes with the remaining cheddar cheese.
- Bake the pie for 30 minutes. Optionally, broil for a few minutes to lightly brown the cheese.
