How to Make Irish Stew
- Preheat your oven to 350°F.
- Heat the olive oil in a large pot over medium-high heat. Generously season the beef stew meat with salt and pepper.
- Brown half the beef cubes in the pot for 3-4 minutes per side until golden. Remove the browned meat and repeat with remaining cubes.
- Sauté the chopped onions in the same pot for 5-6 minutes until tender and translucent. Add minced garlic and cook for another 30 seconds.
- Return all the beef to the pot. Sprinkle the flour over the meat and onions, stirring well to coat.
- Combine the Irish stout, beef broth, tomato paste, halved potatoes, thyme, and carrots with the beef. Stir to mix and season with salt and pepper.
- Cover the pot and place it in the oven. Bake for 2 1/2 to 3 hours until the meat and vegetables are tender.
