Method
 

How to Make Irish Stew
  1. Preheat your oven to 350°F.
  2. Heat the olive oil in a large pot over medium-high heat. Generously season the beef stew meat with salt and pepper.
  3. Brown half the beef cubes in the pot for 3-4 minutes per side until golden. Remove the browned meat and repeat with remaining cubes.
  4. Sauté the chopped onions in the same pot for 5-6 minutes until tender and translucent. Add minced garlic and cook for another 30 seconds.
  5. Return all the beef to the pot. Sprinkle the flour over the meat and onions, stirring well to coat.
  6. Combine the Irish stout, beef broth, tomato paste, halved potatoes, thyme, and carrots with the beef. Stir to mix and season with salt and pepper.
  7. Cover the pot and place it in the oven. Bake for 2 1/2 to 3 hours until the meat and vegetables are tender.
