Roasting Instructions
- Preheat your oven to 200°F (93°C).
- Prepare a rimmed baking sheet by lining it with parchment paper.
- Cut the tomatoes in half, quarters, or sixths depending on size.
- Toss the cut tomatoes with salt in a large bowl, then spread them evenly on the baking sheet.
- Bake for 3 hours, then gently press and flip the tomatoes.
- Continue baking for an additional 3 hours or until leathery yet pliable.
- Cool the tomatoes completely on the baking sheet.
- Store in a jar covered with olive oil and basil.
