Method
 

Roasting Instructions

  2. Prepare a rimmed baking sheet by lining it with parchment paper.
  3. Cut the tomatoes in half, quarters, or sixths depending on size.
  4. Toss the cut tomatoes with salt in a large bowl, then spread them evenly on the baking sheet.
  5. Bake for 3 hours, then gently press and flip the tomatoes.
  6. Continue baking for an additional 3 hours or until leathery yet pliable.
  7. Cool the tomatoes completely on the baking sheet.
  8. Store in a jar covered with olive oil and basil.
