  • 500 g Ziti or Penne Sturdy base for flavors
For the Salad
  • 1000 g Tomatoes Chopped into 1.25cm pieces
  • ¾ cup Basil Finely sliced, can substitute with Italian herbs
  • ½ cup Parmesan Finely shredded, can substitute with mozzarella
For the Dressing
  • ½ cup Extra Virgin Olive Oil High-quality oil recommended
  • ¼ cup Balsamic Vinegar Provides acidity and sweetness
  • 2 cloves Garlic Minced for flavor
  • ¾ tsp Salt To amplify flavors
  • ¼ tsp Black Pepper To amplify flavors

  • ¼ cup Pine Nuts Toasted, adds crunch
  • Balsamic Glaze For drizzling on top

Method
 

Preparation Steps
  1. Bring salted water to a boil and add your ziti or penne. Cook for 2 minutes longer than the package instructions until it's very soft, then drain and place back in the pot.
  2. In a jar, vigorously shake together 2/3 of the balsamic dressing ingredients. Pour this over the warm pasta to help it absorb the flavors while stirring gently.
  3. Dice your juicy tomatoes into 1.25cm (½”) pieces, reserving their delicious juices. Mix these with the remaining dressing ingredients in a bowl and let them sit for about 10 minutes to meld the flavors beautifully.
  4. Pour the reserved tomato juices into the pasta, add a sprinkle of salt to the mixture, then gently toss everything together, including the fresh basil and Parmesan.
  5. Transfer your vibrant pasta salad to a beautiful serving bowl. If desired, drizzle with balsamic glaze and finish with a sprinkle of toasted pine nuts for extra crunch before digging in!
