Preparation Steps
- Bring salted water to a boil and add your ziti or penne. Cook for 2 minutes longer than the package instructions until it's very soft, then drain and place back in the pot.
- In a jar, vigorously shake together 2/3 of the balsamic dressing ingredients. Pour this over the warm pasta to help it absorb the flavors while stirring gently.
- Dice your juicy tomatoes into 1.25cm (½”) pieces, reserving their delicious juices. Mix these with the remaining dressing ingredients in a bowl and let them sit for about 10 minutes to meld the flavors beautifully.
- Pour the reserved tomato juices into the pasta, add a sprinkle of salt to the mixture, then gently toss everything together, including the fresh basil and Parmesan.
- Transfer your vibrant pasta salad to a beautiful serving bowl. If desired, drizzle with balsamic glaze and finish with a sprinkle of toasted pine nuts for extra crunch before digging in!
